Chef Martig is a citizen of Switzerland.
He successfully completed a three years apprenticeship as
Pâtissier – Confiseur – Glacier in Switzerland. Then worked in a
number of pâtisseries – confiseries before going to the United
States at age 26.
He started as Pastry Chef at the Mark Hopkins hotel then at the
Fairmont hotel in San Francisco. The next 13 years were spent in
Las Vegas, working at the Aladdin hotel, Caesar´s Palace and
opening the 3000 rooms MGM GRAND hotel; all three positions as
Executive Pastry Chef.
Chef Martig was selected to open the 2000 rooms Sheraton –
Waikiki hotel in Hawaii. He then returned to San Francisco later to
be the original Pastry Chef Instructor when the California Culinary
Academy was founded and spent a total of five years teaching
there; he was instrumental in writing the pastry program. An offer
came to open the five stars Carlton Hotel in Johannesburg, South
Africa, as Executive Pastry Chef. The offer was gladly accepted.
The sea also tempted Chef Martig; he spent two years sailing the
World as Corporate Pastry Chef for Royal Viking Line. Later he
became Executive Pastry Chef when the Crystal Harmony sailed off
Nagasaki on her maiden cruise; he also wrote the pastry concept
and desserts cycles for Crystal Cruises. Chef Martig was Executive
Pastry Chef at the Anaheim Hilton and at the famous Century Plaza
Hotel in Beverly Hills. Then returned to the Seas as Corporate
Pastry Chef for World Wide Catering in Miami, in charge of
designing desserts cycles in the Corporate Office then
implementing on board 12 cruise ships.
Returning once more to shore side life, Chef Martig was Chef
Pâtissier at the famous Montreux Palace Hotel for two years; this
hotel is considered one of Switzerland’s best. Finally, for the last
three years, he was hired to run the pastry department as Dean at
the Instituto Culinario de México, also writing the whole pastry
department concept and curriculum. Followed by demonstrations
in Singapore, Jakarta, Saudi Arabia, Bangkok,Mexico City, Panama
City, San Salvador, Monterrey (Mexico),  Bruges/Belgium, Chiang
Mai.
Chef Denis Martig has won 9 gold medals in professional
competitions, 3 best of Show Awards, 2 best pastry work Awards,
2 judges special Awards and 1 most original show piece Award.
He speaks fluently French – English – Spanish and has participated
at seven openings as Executive Pastry Chef.
During his very successful career, Chef Martig was proud to have
prepared desserts and cakes for Heads of States, Presidents,
Governors and personalities of Show Business.
He was particularly proud to be selected to make Elvis Presley’s
wedding cake in Las Vegas.
